Stuffed Baked Potatoes
Ingredients:
2 Lg Baking Potatoes
1 Tbsp Chives, Optional
2 Tbsp Butter
Salt & Pepper to Taste
2/3 Cup Cheddar Cheese
3 Bacon Slices, Fried & Crumbled
4 – 5 Tbls Sour Cream
Directions:
Bake potatoes until tender and skins are very crisp, about 1 ¼ hours. Cut potatoes in half lengthwise and scoop out centers into bowl. Add butter and mash until smooth; fold in cheese, sour cream, chives, salt, pepper and bacon. Mound mixture back into potato shells and bake for another 15 minutes.
Serves 4
